How espresso ratios work
An espresso ratio is expressed as 1:X, where 1 is the dose (dry coffee in grams) and X is the multiplier for the yield (liquid espresso out). A normale at 1:2 means 18 g of coffee produces 36 g of espresso. A ristretto at 1:1.5 stops earlier for a sweeter, more concentrated shot. A lungo at 1:3 runs longer and extracts more bitter compounds — ideal for longer drinks.
Shot time is the most useful dial-in signal. If your 18 g dose is yielding 36 g but taking only 18 seconds, grind finer. If it is taking 45 seconds, grind coarser. Target 25–32 seconds for a normale as the starting point, then adjust to taste.
